Mono-varietal vs Blended


This is the kind of oil made with just one variety of olive. One of the advantages of this kind of oil is that it has a clean, well-defined flavour, meaning that the olives and the crafting of the oil must be impeccable. Each olive variety has its own characteristics and attributes. The most classic varieties are Arbequina, Picual, Hojiblanca, Cornicabra, Leccino, Frantoio, Moraiolo, Ogliarola, Coratina, Nocellara del Belice, Gentile, Canino, Biancolilla and Carolea. We recommend that you sample the different oils crafted with a single variety in order to choose the one you like the best with each dish.

Coupage or Blended

Coupage, or “the art of blending oils”, is the kind of oil which is made up of different olive varieties in differing proportions. It can be natural, stemming from the mix of olive varieties during the harvest, or crafted to the producer’s taste specifications in order to modify the attributes of an oil and make it more attractive to consumers, while also striving to attain similar organoleptic properties every season. The major advantage of blended oil is that we can ensure a ‘brand flavour’ depending on the amounts and varieties chosen by the tasting team.
